Simple Chia Seed “Pudding”
Chia seeds are a good source of protein, fiber, and calcium and can be soaked to make a tasty, nourishing pudding-like snack. The trick is to make sure they are well soaked–for at least a couple of hours.
- 1 Tbsp chia seeds
- 1/2 cup unsweetened almond milk (or sub in coconut milk if desired)
- handful of fresh or frozen berries
That’s all you need but you can accentuate the mix with other ingredients. I often add ground cinnamon and ginger. I’ve also played with and liked maca root powder pre-workout or matcha green tea powder in the morning.
Stir in ingredients and let sit overnight or for a few hours in the fridge. If you let it sit overnight, give it another good stir in the morning to help distribute the chia seeds and let them all get well soaked. Keep chilled in the fridge until serving.
